My celery is just starting to die off (May) with an increasing number of
brown
leaves appearing as
the cooler months draw closer. But I want to have celery
over the winter,
also celery loses its
texture quickly so here's some helpful tips
for storing your own grown or
bought celery for winter.
Growing
You can sow celery seeds from August to March.
Celery needs a long growing season free of frosts so wait for the frosts to
pass
before planting
seeds. Celery needs sun so choose a spot that gets good sun
or part
shade.
Sow the seeds thinly and dust with a fine layer of seed mix they will take
14-20
days to
germinate.
Space in rows 20-30cm apart.
Freezing Celery
Celery can be frozen, but then it is only suitable for cooked dishes, celery
in a casserole is divine.
Celery stalks can simply be trimmed and washed without the hassle of
blanching and then frozen.
Their frozen period is between 10-12 months, so I have been frantically
freezing my celery.
When you use the frozen celery put it straight into dishes don't thaw it
first.
Refrigerating Celery
Wrap stalks in a damp paper towel and then in aluminium foil to keep fresh
in the fridge for 4 weeks!
