Apple Sauce
Peel, remove core and chop apples add to a little water and simmer and then mash and put into a jar with a label and hat in the fridge for baking or on pork.


Spiced Apple Cake
Ingredients
125g butter
1 cup cooked apple (if you've stewed older apples
earlier this is handy)
1 cup sugar
1 egg
1 1/4 cups flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp salt
1 tsp baking soda
1/2 cup sultanas (I leave this out because the kids don't
like them)

Preheat oven to 150ºC.  Melt butter and add apple, sugar and egg and stand for 5 minutes.  Sift dry ingredients.  Grease cake tin.  Add dry ingredients to apple mixture and stir until just blended.  Pour into cake tin.  Bake for 50 minutes or until springy to touch

Toffee Apples

Kids big and small love these, make some for Christmas or your next kids party
Ingredients
8 smaller red apples
1 1/2 cups of caster sugar
1 tablespoon of vinegar
1/2 cup water
6 drops of red food colouring
8 lollypop sticks (or use chop sticks cut in half)

Wash apples and dry thoroughly. Remove any stalk and push stick into the centre of each apple. In a heavy-based saucepan place the sugar, water and vinegar and heat gently for 5 minutes or until the sugar is dissolved. Turn up the heat and boil vigorously for approximately 18 minutes until the toffee just starts to turn golden. Test to see if the toffee is going to set (every minute after 6 minutes) by getting a small amount on a teaspoon and dribbling into a glass of cold water. When the threads are hard, it's ready. Remove from heat and add food colouring. Dip in the apples into the toffee and twirl each apple to make sure it is well coated and the excess drips off. Place the toffee apple on grease proof paper to cool. Note this step is not good for young children as the hot toffee mixture can be very dangerous.

Filo pastry triangles with Blue Cheese and Apple

Makes 36 yummy triangles
Ingredients
2 Granny Smith apples, grated with skins on
1 tsp lemon juice
60g blue cheese, crumbled
Salt and freshly ground black pepper
12 sheets filo pasty
Olive oil to brush
¼ cup sesame seeds

To make the filling, sprinkle the grated apple with lemon juice to prevent browning. Mix in blue cheese and season with salt and pepper. Gently squeeze mixture to remove some of the moisture so the pastries don't become soggy. Spread a sheet of filo pastry on a work surface, and brush pastry lightly with olive oil. Lay a second sheet on top of the first and brush with oil. Cut prepared filo into six strips widthways. Place a teaspoon of filling at the end of one strip and fold end in to form a triangle. Continue folding the pastry strip until you are left with a wrapped triangle parcel. Repeat process with remaining pastry and filling. Heat oven to 200°C. Place filo triangles on a baking tray and lightly brush with oil. Sprinkle pastries with sesame seeds. Bake for 10 minutes or until golden brown and crisp.
