Feijoas

Feijoa Spice Cake
Ingredients
125g butter melted
1 cup peeled and chopped feijoas
1 cup sugar
1 egg
1 1/2 cups plain flour
1 1/2 tsp baking powder
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
1 tsp allspice (I tried mixed spice one day when I didn't have all spice in the pantry its' OK but not as good as all spice)

Preheat oven to 180ºC. Butter a 25cm cake tin. Melt butter and remove from heat.  Add sugar and beat a bit.  Add egg and beat for couple minutes.  Add feijoas to butter mix and just stir.  Combine all dry ingredients.  Fold the dry ingredients into the wet ingredients.  Pour into a cake tin.  Bake for about 30-40 minutes until the top feels springy.
Cool and remove from tin.  Ice with a butter icing and store in cake container.

Feijoa Crumble
Ingredients
10-14 feijoas
2 Tbsp brown sugar
1/2 cup water
100g butter
1 cup plain flour
1 tsp baking powder

Preheat oven to 160ºC.  Peel and slice feijoas and lay in an ovenproof dish.  Add brown sugar and water and stir.  Combine butter, flour and baking powder until it's like breadcrumbs.  Sprinkle over fruit Bake 45-60 minutes until top is crisp.  Serve with cream, ice cream, custard and/or yoghurt.
Tip
If you don't have self rising flour use plain flour and add a tsp of baking powder per cup of flour
Tip
If you're too busy peel and freeze the Feijoa and at a later date thaw and make the recipes later especially when feijoa's are out of season.
