Rosemary

Rosemary Focaccia Bread
This makes a wonderful alternative to garlic bread
Ingredients
1 tsp dry yeast
2 cups warm water
1/4 tsp sugar
5-6 cups flour
1/4 cup olive oil
1 Tbsp salt
Combine the yeast, water and sugar in a bowl, cover with plastic and leave
for 20 minutes
Rub oil around the inside of a bowl
Mix the flour, oil and salt in a bowl and make a well in the dry ingredients
Pour in the yeast liquid and knead the dough for 10 minutes
Put the dough in the oiled bowl and cover with a damp tea towel for an hour
in a warm place (I like to use the hot water cupboard) until it rises
Place baking paper on an oven tray
Spread the dough on the tray with your fingers until about 1.5cm thick - you
could make two small or one large bread
Cover with a damp tea towel and leave for 10-20 minutes to rise
Press out dough with fingers and leave covered for another 30 minutes
Now preheat the oven to 200ºC
Make indents on the top of the dough with your fingers and press in rosemary
and drizzle with olive oil and sprinkle with sea salt.
Bake for 25 minutes until the top is golden brown.
